We might be late with our greetings, but hey! we have a sweet compensation lined up to cover the default on our part. This is our all-time favorite cake recipe for every festive dinner- birthdays, weddings, or maybe post-New Year. Everything about this chunk is an absolute delight, from the citrus ting of blueberries to the potent high-fibrous oats.
Let’s dig into the recipe already!
“The What”
· 1 cup powdered oats
· 1 ½ cup all-purpose flour
· ½ cup butter
· 1 ½ cup boiling water
· ¾ cup brown sugar
· 2 Eggs
· 1 tsp vanilla essence
· 1 tsp baking soda
· 200 gms fresh blueberries
· ½ cup powdered sugar
· 1 cup cream cheese
· ¼ cup milk
“The How”
1. Pour the powdered oats and melted butter into a cup of boiling water and mix well.
2. Add the baking powder to the all-purpose flour and mix well.
3. Add baking powder + all-purpose flour mix into oats + water mix and fold the ingredients well.
4. Add sugar and vanilla to the mixture and mix well.
5. Beat the eggs separately and add them to the mixture.
6. After thoroughly mixing the batter, add the fresh blueberries and fold slowly.
7. Preheat the oven and bake the cake at 350 degrees F (175 degrees C) for 25 minutes or until a fork comes out clean from the cake.
8. Microwave the cream cheese and milk for 1 min at a low temperature.
9. Add powdered sugar to the cheese milk and mix well.
10. Chill the mixture till it solidifies and mix well.
11. Spread the cheese-milk mix on the cake and cut some yummy slices for yourself.
